The Pacific Northwest provides an amazing array of food from many cultures and traditions. From wild game like venison, elk, moose and bear to ocean harvests like halibut, clams and crabs. Then there’s lamp and sheep, cranberries and apples. A very rich palette of flavors indeed. This book barely scratches the surface of what can be found in Alaska, Oregon and Washington. It’s merely an introduction.
“Whether Finnish or Inuit, logger, fisherman or rancher…eating from the community pot and sharing a meal at the table binds us all.” – Flannel John.
